at what age do kittens grow out of tearing up things and shredding curtains and start to mellow down?

It depends on the breed. A bengal is active forever. A ragdoll will be laying around in a heap in about a year. A ally cat that would make a good mouser may be active forever. A spayed/neutered cat will slow down some, then if they get a little fat they'll settle down.

Put on softpaw claw covers on your kitty so he won't tear things up and/or provide tall sturdy sisal rope scratching post or cat tree. It helps to distract him from destroying improper things. Did you provide enough toys? Are you thinking about getting 2nd kitten/cat which will keep this wild kitty company?

He should grow out of this behavior at 1 year old.

depends on the cat... usually after a year or 2 they start to mellow a littl ebit, triming their nails will mean less damage :)
